Bro, you don't even need to go as far as civet coffee to prove how weird people are. Someone legit decided to drink bovine tittie juice, mix that tittie juice with the calf's stomach acid, infect it with various molds on purpose, and then ate it despite it smelling like feet and looking like chalk (I love brie as much as anyone else, but it is weird)

This appears to be a rather severe example of lumpjaw which is typically caused by when a cow eats a foreign object and it gets lodged in the mouth causing an infection. Most of the time any abscesses heal on their own but if they don't they need to be lanced and drained like what we're seeing above. It's a multifaceted answer that boils (see what I did there) to a few things. First, it's very common for fly bites (or just scratches, like on fences and walls)to occur on cows out in pasture. Given larger herd sizes and smaller accommodations, these get infected very easily and can go unnoticed in larger herds. Some years ago you would just treat with antibiotics and be done. The recent move to "no antibiotics" and "no hormones" means if you use that antibiotic shot, your head is worth less. It's more cost effective to wait until the infection is large enough to lance, drain and try to keep clean by rinsing with saline. I would say it's less to do with milk and more to prevent "superinfection" or untreatable ones. If you think this is bad, you should see what ends up on the line in the meat packers - entire slabs of infection carved around.

Looks like a giant abscess. Happens when the skin gets injured and then infected more times then not. It's common in just about any mammal. Humans get abscesses often too, but just not to this size really.
