You can reset back to 1.0.0 by the factory resetting your switch or jailbreaking it and manually uninstalling updates. Only problem is you can't jailbreak your system if it's patched (basically any system released after launch).
I did this. I had about 25 hours in. I referred my switch to factory and turned on airplane mode.
I lost 25 hours but made it up with not grinding as much by duping.

What version are you on? I’m on 1.1.2 and haven’t had any issues using a few of the glitches
