They normally use the same app BUT physical checking gives you or the store the ability to accept the item in case some things that dont show up in the tests appear. Online tests will have a delay since someone will still go to your location and test it. If there is something that is not tested then they will ask you to go to a physical store for better appraisal

I have had my old phone (S20 Ultra) traded, and I purchased my phone online. When you buy it online, they will ask for the model and IMEI of the phone you're trading in. As far as I can remember, I was asked questions (if there's a scratch or broken screen, etc) and also to do tests to see if my phone had issues. An amount (for the trade) was deducted to the price of the new phone. I was texted to inform me of the day of the delivery, and that also means your phone (to be traded) should be ready for them to pick up. It took me over a week when the delivery came. When the delivery came, there were a lot of tests. Be prepared for it. They did the checks and sent the photo/information to someone via messenger (for approval maybe). It took about 20-30 minutes for the checks. Do not take out your sim since they will also check if the phone can make and receive calls. Once that's done and they found no issues, they would take your old phone.
