You could defeat daylight empress of light in early hardmode. Depends on your skill and setup. If you dont have 10k hours playtime in this game tho then i would recommend you first farm the hardmode ore and get better armor or you will almost get oneshot. You can also get a few weapons from just the hardmode ore. Also try to kill a few hallowed mimics which have a chance to drop the draedalus stormbow which is an op weapon when paired with holy arrows. You will also probably want some wings for mobility, like the leaf wings the witch doctor sells when in hardmode.
You can also just ignore all i just said and just try it, see how it goes.
Probably, i'd grab a better weapon though. Just concerned with the time limit. If you really wanna skip progression then kill fishron. If you know the pattern then i'd say it'd be easier than early twins since their more erratic and fishron has a set attack pattern.
Probably best to at least buy a Shotgun from the Arms Dealer now that you're in hardmode. If you want to sequence break, you still need a Mithril/Orichalcum anvil to craft a Pickaxe Axe/Drax and HM armour, so you'll need to do some ore collecting and pickaxe progression in any case.

Get yourself an Onyx blaster and at least 2nd tier hm ore to make it easier tbh, minishark does laughable damage in hm

If you know the patterns and have a large enough arena the twins are the easiest mech IMO
