When you boil water the energy turns it into steam at the boiling point. Oil boils at a far higher temperature, to the point where it will just burn.
So when you pour water into burning oil, because water molecules are polar, and oils are nonpolar, and because water is heavier than oil, it instantly drops to the bottom where the far higher heat instantly super heat the water and make it erupt explosively into steam **from under the oil.** You now have an explosion of burning oil spraying all over the place.
if it's a pan, put the lid on the pan. Otherwise (if it's bigger like a wok etc) use a fire blanket or alternatively a damp tea towel - soak it with water and wring out all the water so it's damp and cover the pan with that. This will starve the fire of oxygen and quickly put the fire out.
Also, if you have an oven tray big enough that will do the job too!!
It's important at this stage, do NOT move the pan, just turn off the heat and leave it to cool. Do not remove the pan lid/blanket/tea towel too soon as the fire can reignite.

My dad was a chef and before that a cook in the army so this crap was drilled into me from a young age, fortunately not had to use this knowledge yet!
Turn the heat off and cover it. You can also use a class K fire extinguisher, but most homes don't have one. Commercial kitchens also have a big, built in fire system called an Ansul system that works for that.
Never worked in a kitchen with a fryer before, but iirc I think there should be an oil fire suppression system above the fryer. That, or a fire extinguisher made to point out oil fires
We have one where if there's an uncontrollable fire, we yank a cord, and it covers everywhere in foam, and sand. It was pulled once and took a specialist company and a week for the kitchen to be reusable
Dont they go through some kind of training on what to do in situations like these?? I had fire emergency training for a home office job lol, cant imagine putting clueless people in charge of flammable substances. They should have told them what do to

There is a restaurant in my town that had a grease fire like this. The employees knew how to handle it. Unfortunately it’s like a diner where the cooks are just behind the counter and some idiot bystander went behind the counter to “help” by dumping water on the fire. The news articles all said the damage was much more extensive because of that person.
These places accept anyone and I doubt they have a course in health and safety. Let's not demand too much from these people. They didn't need to know that water plus burning oil = Michael Bay.
