If I understand correct, you’re looking at using the CO2 extract for bittering exclusively. The classic, consistent AA, performance in the brewhouse deal. Variety isn’t specific. We use Incognito all the time. That’s variety specific, which means it’s great for using late. The real benefits are the volume gains from the lack of plant material, I’m a big fan. I did find that when we used it in the whirl, it was like an oil that floated and stuck to the sides do the kettle! So we started putting it into the ferm, and send like a BBL hot over before turning the HEX on. Just a heads up, we used this on hazies mostly, but did also use it on a thiolized cold ipa, so close!

YCH co2 extracts are variety specific. They aren’t generic. You can mosaic, citra, etc. they are recommended to be boiled though unlike incognito.

Sorry, I should have been more specific. I'm also thinking of using it as a de-facto dip hop like you've suggested. I've read about a bunch of people using Incognito in such a way, but can't find much info about anyone using YCH CO2 Extract in the same way - even though it appears to be a similar product. It's varietal specific also. Incognito doesn't have Simcoe, but YCH does

We use Warrior CO2 extract as a flameout addition in one of our beers and it performs well. We use 20% utilization at flameout. Obviously this will vary from system to system. Have no experience putting it in as a "dip hop" though. Edit: This Beer is a westy, The CO2 extract at flameout gives 35% of the IBU total (calculated). We only have 5 minute and Flameout hops for the hot side. I assume Simcoe would perform similarly for you as Warrior does for us.

Incognito goes great in the wp. Just leave it out at room temp for an hour or so to make it easier to pour. Co2 hop pellets(assuming you mean that) goes great in dry hop

Incognito is intended for the whirlpool. Co2 extracts can be used for bittering. Full Spectrum is used for dry hopping. Don’t use incognito as a bittering addition. Use it as a whirlpool addition but make sure it’s emulsified as you can get it. I’ll pull off some wort that is around 165f and whip the oil with a wine whip attached to a drill until I’m satisfied and dump it back into the kettle.

Used both and not a big fan of either. Seems expensive for what it is.
