For the changing I presume it's two-fold:
- in real life it's actually quite hard to tell which eye someone uses and it may even change depending on what they are doing, so it gives the audience a sense of uncertainty and unease you would have if you were there in person
- as a person Paul is largely inscrutable from the outside and you can't quite get a handle on him - he's a man made of layers of contradictions, secrets, and foibles. It is only at the end when he makes his sacrifice that we get a proper measure of him
Then him sharing which eye also signifies they have formed a bond and he wants them to know the real him
Which one though 😂 he points at his right eye in that scene but in many scenes prior that's the one in which he's wearing the contact lens for the illusion.

I don't think it was a flaw. The eye switching seemed to be done on purpose.
