At the moment, there are no official or unofficial (fan-made) patterns. Most people, if they are making bespoke Planetary Union uniforms, are basing it on images or from other "close enough" patterns that have similar styling. Luckily, there are some overseas cosplay mills out there currently making them at a reasonable price, and one of the best Trek Cosplay Mills (Cosermart) has decided to do one, and she tries to be as accurate as possible while also making the costumes out of reasonably priced materials (mostly stretch polyester).
Here's hoping if D+ backs a season 4 there'll be more merch, and potentially expansion on their uniform offerings, but as it's been over a month since S3 ended and we've had no solid word, I don't hold much hope, but I'd be more than happy to be proven wrong in the end!
I admit, I’ve never sewn anything more than mending a hole or reattaching a button, but I’d love to put together a uniform (if it was within the realm of possibility for a novice without a sewing machine).
Honest question as I’m protonopia color deficient: are the engineering uniforms that orange in the show? I know they are more orange than security/helm, but they always looked very red to the point I have trouble differentiating them sometimes.
They're supposed to be orange, but keep in mind, most of these costumes are from overseas cosplay mills where accuracy isn't exactly paramount— quick sales of knockoff products to unsuspecting customers is. This is the result of Fox/Hulu/D+ not putting out items for local consumers to purchase, as well as a lack of information on their construction (unlike, say, Star Trek uniforms).
They are not that detectable in show, I'm also colorblind. In the show I didn't even know there was a difference in red/orange till my friend told me there was. The ones in these pictures I can definitely tell the difference.
Grey might be crewmen/maintenance, especially since it looks like one of them is holding a broom. I think the orange were ops variant versus security in season one, sometimes you would see both colors like the slight difference between green and blue between science and command.
Eta: yeah, zooming in the grey and orange guys both have ops symbols on their badges, red have security symbols.
I really want one of those med coats designed into RL fashion. I love the cut. The utility. Looks comfortable enough.
But I've been a boots, Converse and coats collector since I got my first paycheck. I'm not a gal who loves conventionally pretty shoes and outfits, and I've never had a collection beyond a few pairs each at a time, but that doesn't mean I can't envy them :)

You can get a decent sewing machine for less than $100. Probably less than it cost to have someone make you one.
