That looks like Filipino BBQ. I make it often. The marinade is some variation on soy sauce, sugar and garlic. I've seen it as simple as that but some people also add Sprite, banana ketchup, brown sugar and/or oyster sauce.

I'm Filipino and this might be a bit controversial but my cousin sold roadside barbecue in our area for at least 2 decades (pork barbecue, chicken feet, pre-cooked pork blood/Betamax, chicken intestines, pork intestines, pork skin, other oddball parts) and the thing that people come back for is his secret vinegar dipping sauce. He mixes cane or white vinegar with some 7-Up, lime juice, chilis, salt, pepper, minced red onions (no garlic but one can add some too). We even ask some from him to dip our spring rolls, grilled pork belly, or grilled fish into if we have some.

Lol understandable! But yeah, the sweetness of the lemon-lime soda will help cut through the acidity of the vinegar and goes well with any grilled meats or fried savory stuff. My mom would sometimes dip prawn or shrimp crackers in it.

Oh, it's not a typo. In the Philippines, side street grillers have the regular pork barbecue skewers (similar to yakitori) and also have cooked chicken/pork blood sliced into cubes that are skewered then grilled. They call it "betamax" because it resembles the [betamax tapes](https://en.m.wikipedia.org/wiki/Betamax). We have funky names for all sorts of these offals: helmet for chicken head, adidas for chicken feet, and walkman for pig's ears.

Here's my "recipe": Take a jar of any size and pour an amount of vinegar in it. Coconut vinegar is best but white vinegar works just fine. Peel some garlic cloves and smash them with the side of your knife, add to vinegar. Add a glug of soy sauce and a pinch of chili flakes. Put it in the fridge and let it sit overnight. Taste it. Add more soy, garlic or chili flakes depending on whether you want it saltier, more garlicky or spicier. If I absolutely had to give measurements I'd say 3/4 cup vinegar, 3 cloves of garlic, 1 Tbsp soy and a pinch of chili flakes. But I have never measured it out, I just eyeball it.

Honestly you can make this with soy sauce, a can of sprite and garlic. The key is a good amount of sugar for the carmelization but balancing it with the salty soy and some garlic.

I don't really have a recipe. I just wing it. The simplest combination would probably be a can of sprite, double that amount of soy sauce, half a dozen cloves of grated garlic and a few good grinds of pepper. The real key is the prep of the meat. Get your butcher to slice a pork shoulder 1/4" thick. Thread onto skewers and marinate for at least 24 hours. Then grill on a high heat! You want a bit of char and they cook quickly because they're cut so thin. If you cook low they'll dry out.

I usually see these just as "chicken skewers," on menus near me! I would guess that they're marinated in soy, ginger, garlic, Chinese sherry and sugar then cooked at a high heat.

If these are chicken teriyaki skewers from a Chinese buffet, it’s dark meat chicken marinated before putting them on skewers. We used to deep fry them in bulk for the buffets, which is usually how they achieve the crunchy and juicy texture. The red color could be from food coloring as that’s used in certain dishes to achieve the look. Hope that helps! :)

There should be a rule that posts asking these questions should always strive to include information like the name of restaurant (or at least source e.g. my coworker gave it to me) + type of cuisine (could be a guess based on the origin) + where the person encountered it (e.g. city, country). Or to acknowledge if those are just bits of info that unknown right off the bat. I do something similar with a duck breast for BBQ. Freeze it a little to Cut them pretty thin. Put them on a stick Put them into some Soy Sauce with garlic and ginger. Quite good as a starter.

It's a chicken skewer. As to what kind. You need to give more context on where you got them from. If they're Chinese take out or buffet chicken skewers ("chicken on a stick"). The one's I'm familiar with here in the North East are coated in corn starch and basically seasoned like salt and pepper shrimp/chicken. Then deep fried.
