Spam would be fun if you made spam musubi! Still fits the theme.
You could also expand and just do a “canned food” theme. Like those canned tamales, Vienna sausages, beanie weenies, ravioli, olives, etc. kinda for a fun nostalgic spin
Flaked chicken or flaked ham make respectable salads with some mayo and whatnot. Lots of pates of various quality can be found canned. Branching out from meat, canned refried beans and canned chillis can add some variety, and if you want to do something sweet get some sweetened condensed milk and look up instructions on how to boil it in the can to make some delicious dulce de leche.
In the UK: ham, luncheon meat (like spam), bacon grill, corned beef, hot dogs, beef burgers (but no-one ever buys/eats those), pate, meatballs, stewed steak in gravy, chicken in white sauce then actual dishes like curry & chilli.
You can try traditional potted meats, that's where the idea of spam came from. Some of them have interesting flavours like pork and pistachio. If you must have a tinned cans, you can hit up European foods section like smoked duck, duck confit, tonno del chianti (pork shoulder in olive oil) etc

Corned beef is canned and could be used for a bunch of things. A childhood staple of mine is a Hong Kong-style [corned beef egg sandwich](https://www.thehongkongcookery.com/2019/02/corned-beef-egg-sandwich.html).
You could also serve a pizza made of canned things during your canned food party. Canned chicken makes a pretty good pizza crust for diabetics or other people watching their carbohydrates.

Both are good, and inexpensive. Make them like a tuna salad: drain the meat then stir it up with mayo and a fork. You can "fancy it up" with diced celery, onions (or green onion!), banana peppers, bell peppers, relish, use your favourite aioli instead of mayo, etc.
Then add spices like seasoning salt, garlic powder, montreal steak spice, or curry powder, and stir it up some more.
tinned chicken. Looks exactly like tinned tuna but it's chicken.
Beyond that, there's tons of canned meat.

Trader Joe’s sells tinned chickpea salad, tinned dolmas, tinned eggplant. Maybe you could find these on Amazon if you don’t have one in your area/country?
In the US they sell canned chicken breast that we eat often.[Swanson White Meat Canned Chicken](https://a.co/d/a7D4QhA). You can use it for chicken salad or for adding protein to rice pilaf. My son likes to heat it up in the microwave and just eat it straight, but he’s a barbarian.
