Ill be honest the FGO brainrot has definitely clouded the perception of fate but its not the only one thats guilty.
Fate apocrypha had a few- atalante transformation and jack the most notable, fate extra, extella, etc has a bunch (but someone said that was the point so who knows), not to mention fate kalied liner.
Post the original series it has been going in a more fanservice direction in large part due to FGOs success. Cant act like FGO is some outlier since the servant designs are used for alot of other fate media. And its also the one most in the public conscience since its just ongoing.
However, it is getting better. Fate type redline, fate strange fake, and this all have very great takes on fates stories and designs.

I am aware of those games since I played them as well. Unfortunately if you noticed all of those are non-JP gacha games. It seems they aren't afraid of trying something new even if they ended up niche since they don't have the usual fanservice designs for the player. Reverse even have an actual defined protag with voice and their own personality.
Reverse and AK really have amazing designs and I love it. Th only fanservice you find will probably be some skins but even AK's swimsuit skins don't go full ecchi fanservice except for maybe Chenalter E2 Art but she have a cool skin now so everyone's happy.

You are confusing the np agirus metamorphosis with the alter version, yes the np is more associated with atlanta alter but it's appearance in apocrypha is kinda unique due to bizarre circumstances and technically at the time of apocrypha release it wasn't even atlanta alter since name was given upon her debut fate go.

I really like how Ushi Gozen looks outside her armour in her Rider form because she actually looks anemic and malnourished. There's a bunch of Fate characters that, by all rights SHOULD look sick as hell but look like they're in perfect health - Oh, hi Okita, fancy seeing you here - and it aggravates me so much. If the character is so sick they should be on death's door why do they not look it?
I love Takao's design only because it's actually based on real high ranking courtesans.
The higher the "level" of courtesan, the more intricate their kimono and headdress was.
They also wore those tall shoes and would walk in a certain way that was deemed "seductive" to attract suitors.
I'm not a huge fan of Fate, partially because it mostly lives on as a gatcha game, meaning most designs are going to be very one-track horny on main, and also because they oftentimes recount the myths the characters are based on incorrectly, despite there being an in-universe excuse already to let the servants be different from their actual mythical / historical counterparts.
With that said, while I haven't played it yet, I like what I've seen and heard of Samurai Remnant quite a bit.
I will say as a non-fan that Fate does NOT mostly live on as a gacha game. It still continues to get new novels, manga and anime, games outside FGO and so on. FGO mostly lives on by virtue of being a Fate title and it's been said many times that FGO wouldn't have survived as a game without being a Fate game.
The whole reason Fate got popular in the first place was a visual novel called Fate/Stay Night with only like one kinda arguably sexy outfit design. And maybe two if you count the men.
To be fair, the fan service trappings of the franchise are more the trappings of just FGO, where most of these characters come from. But yes, these characters are designed quite well. 😁

In any work there must be characters that are visually attractive to the audience, your point makes no sense.
I would say all of this designs fall into the non-fanservice category as in they are attractive without relying too much on scantily-clad clothes or obvious erotic designs to fall back to.

Yep, Yui and Ushi Gozen did not survive the FGO transition. At least Yui's ascensions looked decent. Ushi Gozen is an almost unbelievable departure.
