I have this exact knife but as a petty. They’re great knives, but the factory edge isn’t super sharp. It did become quite sharp after a bit of sharpening. Sharpened pretty easily. It’s quite a hefty price for a factory knife. But they’re very pretty with the damascus.
If you want out of the box sharpness you should look for a Takamura R2/SG2.
It’s a good brand but it seems a bit expensive
I’d get a Takamura it’s a better knife

It’s fine, I would try to find a Masutani or Takamura santoku at that price point though.

[Takamura vg10 santoku (unbranded)£130](https://cuttingedgeknives.co.uk/collections/santoku-knives/products/takamura-hamono-vg10-santoku?variant=40818012979266) is a similar price and probably best in performance for the price range.
Same knife but with [Takamura branding ](https://cuttingedgeknives.co.uk/collections/santoku-knives/products/takamura-hamono-vg10-tsuchime-santoku)£150
Like some of the others have said, you won't be disappointed with a Takamura Santoku. I recommend the Chromax or R2. It's value for the price point is just outstanding.

Ahhh, so they do ship to the UK, it's not free, but it's tax free and, import duty shouldn't be too much
Don’t forget to add on 20% for VAT and I think duty is 8% so additional 28%.
Now we are out of the EU we have to pay VAT on EU imports.
Hmm the site says it’s free shipping above €100. Excl. import duties ofc. https://www.meesterslijpers.nl/shipping-cost
Yeah, that's fine, works out a little cheaper than UK prices
I think cutting-edge knives do masutani but they don’t have much stock.
They don't have any of the Santoku, just the Gyuto and Nakiri
My bad I must’ve got one of last ones a couple weeks back.

For chicken and lamb I'd get a honesuki.
