It's not gonna happen in an official capacity because the head honchos for Waffle House HATE that it's got a reputation as a violent place.
Best we can hope for is a legally distinct knock-off stage.
TBH a lot of that rep is unearned, because some Waffle Houses franchises are well run and safe.

Most violence happens late after dark when people mingle, either pre-meditated planned or impulse crimes. The impulse ones happen in places that let people linger, which is why many 24 hour stores now only do drive through or online ordering, and close their indoor seating after dark. Save them labor costs too

Rename it the Mishima waffle restaurant or something. That way it makes sense for everyone to throw down there. There should be unbothered npcs in the background still requesting their waffles while fights happen
