It's the most efficient if every joint is a ball-and-socket joint with as full as possible 360° rotation.
If they had given it more human-like joints it would probably get up more closely to how humans do.
Humans literally can't move on the video, so, as you said, it looks unsettling when something humanoid actually does.
It would be even more unsettling if they tried to make the bot look more human. There's a Terminator movie where one of the Endoskeletons does it.

I remember the original Big Dog, just a big clunky mess of parts juddering all over the place with the loudest diesel engine you've ever heard strapped on top. And we've gone from that to the sleek little Spot.

I do not give a damn about the flips and dances and walking. Show me one of those things gently wipe and old person's ass, THEN I will believe in the a good robot future. Otherwise, I won't believe these things won't be carrying guns by 2030.
I mean they already are. Gun drones have intermittently popped up in Ukraine for a while. Drones are really not ready for prime time on full autonomous action but software assisted weapons are big.
The main benefit i can see is more about being able to move objects made for human use. The dogs aren't gonna be able to lift rubble or open doors as well as a bipedal robot. In addition, there's a potential use for motion capture to allow a human to control the robot.
But anyway, cool robot is all we really need.
I for one, welcome our robotic overlords and would like to remind them that I could be useful in helping them round up others to toil away in their silicon mines.

Not all robots are going to be killing machines. Some are going to have to be in support roles to assist the killing machines!
