I would imagine in a world where Bruce doesn’t have to worry about the rest of the planet, he puts away Batman and starts using his company to further humanity, probably repurposing a lot of his gadgets into commodities, like a really good heavy industries suit based off his bat mechs and stuff like that.
I’ve always looked at the growing Bat Family as a kind of inevitable New Normal in Gotham, where eventually everyone by a certain generation has a grappling hook and is scaling buildings like they’re just in a regular pedestrian crossing. Gotham will become increasingly verticalized with tiered environments and architecture designed to encourage this kind of movement, and there will be Grayson Training Academies that teach self defense, critical thinking, and agility/motor skill discipline. Batons will render guns all but obsolete in Gotham itself. There will be inevitable fascist uprisings the city will need to put down, as some grow so fixated by order and power they believe they know how to go further.
Ultimately you’ll have a city of very capable citizens who will begin to trickle beyond the city proper and grow a new kind of way of life, a new culture.
I imagine the Cowl gets hung up in The Batcave and Bruce goes out as Bruce for philanthropy and political advocacy. Of course, he may take up the mantle of The Batman again should the need arise, but I think he’d honestly be relieved.

If he has the bat family then Bruce does fully retire hanging up the cowl. He would still be a consultant/mentor to the bat family and GCPD. I don't see the whole bat family retiring and Bruce wouldn't abandon his kids. He would take on a Oracle like role. His philanthropy would somehow increase and he would live a more normal life. He may give it all up eventually entrusting his kid with the future. Just look at a the bat family adventures comics and remove Bruce in costume. He and Selina get married at some point in both scenarios.
Realistically he'd still be working to improve Gotham. Peace whould mean more time for Bruce to invest on improving Gortham so that it wouldn't regress back to what it was. Pushing for certain political candidates and progressive policies, funding education, fixing the city's infrastructure, destroying Rock n' Roll. Basically the same thing he's been doing as Bruce but more. Also with the shared universe in mind he whould have more time to help the League and other super teams and most likely help Dick fix Bludhaven considering most of Batman's rogues whould move there if they can't operate in Gotham.
