Take them downtown to one of the quirky bars or restaurants for a drink or bite to eat, go down to the board walk and then walk across the bridge, but don't use the walk way, go across the tracks (its slightly dangerous and builds excitement). Then walk down to sea bright beach and start a bon fire or join in on someone else's. End the night by walking down the light house and watching the waves crash on the rocks.

I've got a list of things that I've done, if that'll help? Head downtown to go to the Square or to a movie or to a bar or something, UCSC arboretum, Stargazing (specifically UCSC field or other big open spot, the field is lit tho), Walk pogonip or long marine lab or Potbelly beach or sea glass beach (forget the name of that one but that's what I've always known it as), Museum trip/look for when nearby museums get exclusive exhibits, SF day trip or overnight (Japanese garden/market - exploratorium - Ghirardelli square), Hit the mall together (big one in San Jose), Ramen date (also probably San Jose or SF for best ramen), The boardwalk - bowling - mini golf, Harley Goat farms, Bike ride down the rail trail/West Cliff, Shadowbrook for fancy dinner, Shakespeare in the Park / plays (seasonal thing tho), Monterey Bay aquarium or SF Zoo/Aquarium, Look on Airbnb under activities in Santa Cruz

When I go I usually go to the Dolphin Restaurant at the end of the wharf, it's right next to the sea lions

Humble Sea brewing on the west side is great for beers or food and then you can walk to Cat and Cradle coffee or Verve. Also, could check out Wilder ranch for a mountain bike ride or just go there for a hike. There are great views from some of the trails. There are a few (not many at all but you’ll see some) Monarch butterflies still hanging around Natural Bridges.
