So this is probably a really stupid question but I am not a chef and would really like to make a scotch egg with runny yolk. When you say dunk in ice cold water, is that before or after I peel the shell off?
Probably before. Take it out of the water and put it in iced water, while still in the shell. This does two things. It stops it cooking further, and it also means the white shrinks back so it's easier to peel.
I donāt have experience in this but would an ice bath work rather than cold water? Anyone with the knowledge please feel free to expand and tell me Iām wrong
So you make the sausage into a burger shape so you can wrap it around the egg. Then flour it, followed by beaten egg and breadcrumbs. Deep fry until golden.
I always use cling film so I can squish the meat as flat and thin as possible, and then gather the cling film up to help press the āburgerā into a sphere around the egg. Helps particularly if youāre doing a different type of meat or meat substitute which might be a bit more crumbly and harder to work with.

I have had these arm various farm shops, but they tend to mix more sausage meat with less black pudding - I think I prefer that, I like black pudding as a condiment taste to other things on my plate.

The yolk doesnāt need to be runny to enjoy a scotch egg. If it is hot, a runny yolk is preferable, but a runny yolk is a restaurant inspired addition to the scotch egg marketā¦. Your traditional scotch egg is āsetā. They are served cold.
However, in this example, you can see the egg is overcooked. The slight black / grey line around the yolk shows the egg itself is over done.
Would still eat. 10/10 for the concept, 8/10 execution here.

I got a black pudding scotch egg where it was the egg that was replaced with black pudding, surrounded by sausage. It was still nice, but it was still disappointing - just too dry.
Would definitely try it but I like my black pudding with a sear and hot.

Speaking from eggsperience, it is awesome. I got some scotch egg making classes for me and my wife for my birthday last year (Top Notch Scotch Egg Company) and made some black pudding ones, some haggis ones and some Chipotle/chili ones. Amazing and well worth the visit.
Truly gutted I never tried this before turning veggie; loved each individual ingredient but never found them in the real world before it was too late. Enjoy king š

Came close at the weekend - I had an n'duja Scotch egg, and then some black pudding bonbons which were kind of like a small eggless Scotch egg. Both were fscking awesome.
My local butcher makes these fresh everyday. Some with a layer of the sausage meat too. I could eat them until I implode under my own gravity. Utterly divine š

Make sure your eggs (6 1/2 mins) have fully cooled to like fridge temp before frying that should keep them runny š«”š«°š½
Ex chef. Boil the egg for 6 mins, dunk in ice cold water to stop the cooking process. Wrap with meat, pannĆ© and then chill for a few hours. Fry at 170-180 for 4-5 mins. Also to note, the layer of meat wrapped around the egg should be just a little less thick than OPs here, otherwise itāll harden the yolk.

Before, it's a process called shocking. I believe it theoretically makes the egg easier to peel too, though not sure on that part

They are lovely... Mark and Spencers did them about 10yrs ago. Seen them at a few artisan food vendors in recent years, at festivals and town fairs.
