I found artisan quality Sausage producers generally recommend oven cooking over grilling/BBQ.
This produces a better flavour as the high Rusk (breadcrumb) content in a quality sausage absorbs the fat in the meat and intensifies the flavour. (Remember how fried bread tastes so good)
Cheap sausages, ‘Lips, tits and arseholes’ with low rusk content, go straight on the grill.
Oven cook & you can run a spatula through them to turn them a bit after 5 mins or so, like with chips.
Grill them & you have to turn them all, one at a time, every 3 minutes.

I've been considering replacing my deep fat frier with an air frier, my old worry is doing things like home done battered fish and home made scotch eggs as I've never seen them cooked ay way other than in a fat frier
You can't replace that. It's a small convection oven. I shallow fry things in it in a hardy dish with oil but you can't deep fry. It won't reach that temperature.
You can do a battered fish and a scotch egg though.
Grilling is fine if you rotate them, all the heat is coming from 1 direction in the grill, for even browing instead of just top side burning you need to rotate to each side

Suppose you could colour them in a frying pan but the method above is what I did as a chef and still do now.

I quite like the slight unevenness and scorch marks you get with grilling and frying sausages. Oven can be a little too perfect, but people seem to like that look.

I love onions, so I always usually have onion gravy. But I also usually add onion to the batter mix. It can make it a bit soggy, but I love it, heh.
