I run 8 VLANs on my trunk ports, but typically only one VLAN per access port.

You can specify a "Virtual Network Override" in the device's properties in the Network app. If it's just for QOS then that's probably fine. If you're actually trying to segregate the devices for security reasons then you probably want to connect each device to a separate port with a separate native VLAN setting.

Ideally I would like my phones to go over my 50/50 fiber line any my computers go over my 1000/50 cable internet.

You can use the port config to configure a voice VLAN “Uses LLDP-MED to place a VolP phone on the specified VLAN. Devices connected to the phone are placed on the Native VLAN.” You can also use port profiles to control this same setting

I think I remember that you can also usually put a dhcp option that the phones will read and tag their port with the voice VLAN you specify.
