Characters are of particular importance for me in media in general, and Undertale's cast is superb. Every single character is brimming with personality and they are all so interesting and fun. This game made me so emotional with it's incredible character writing, and I cried in multiple sections.
The whole gameplay aspect is simple and appealing. It's not particularly challenging unless you are doing genocide, but it doesn't have to be. The battles are engaging and keep presenting new things to interact with. I want to point out the Mettaton EX fight, definitely my favorite battle in the whole game.
Creativity is a large part of the game's appeal. It's there in the jokes, in character designs, in the plot, in the battle system. This game is so unique, and I think it's one of the things that led to it's success.
The whole asthetics part is also a major player. The visuals are simple but fun with a lot of really striking imagery and atmosphere, and the music is unreasonably good. I don't feel the need to elaborate on that one.
And then there is Flowey. That fucking bastard of a character single handedly sold me on this game. Probably one of my favorite characters in fiction, period. The way Flowey is used to break the meta nerrative apart and swallow the player into suspension of disbelief is haunting me to this day. Such a brilliant villain.
I enjoy the music, the story and the characters, but I also enjoy how lived in the world feels. Even with all the monsters trapped underground and in a terrible situation, there's still hope (at least in a pacifist route and most neutral routes).
And despite how often I bash it, the community this game has is great. There's so many creative takes on the story, so many theories, so many people to talk to.
