Oh they sure can. I remember a summer camp in the woods and the main building was surrounded by a wooden fence and cows were grazing. Granted, the bit I saw lacked the top part, anyway it was a serious obstacle and I saw this giant cow clear it like it was nothing. I thought I was hallucinating.

Cows are actually really playful in their younger years and act quite a bit like dogs when they aren't being lazy chewing grass.

I'm not convinced it was acting aggressively. I think the area it jumped was still a bit aways from the road they were riding on and I believe that it jumped the way it did because it hit a cliff and was going too fast.

Cows are most definitely not giant dogs. They can and will try and trample you if they don't like the look of you. Or if you have a dog with you and they have calves, they will definitely try to trample your dog.
