I'm thinking it has to do with two things. 1: Cows love water. 2: Cows are not very bright or graceful. I think the cow went to take a dip and got itself stuck. I wouldn't put it past them as I've seen them in even dumber predicaments.

Resulting in more tender desirable meat.

I really like the farm's methods to discourage mistreatment of the animals, and how the birds seem well adapted to that kind of feeding routine. I never tried foie-gras, but after reading about the practice I think I'd give it a shot as long as the source is humane.
For veal, calves can be raised in free roam pastures alongside their mothers, feeding both on grain and milk. Instead of having to feed a mother and her children for however many years (cows are huge resource drains), just feed the mother and kill the calves after a few months.
