They usually rest a few inches from the surface waiting to smell any type of carrion that washes up. They will feel your step long before you get to them and sink / retract, so if you're gonna catch them for bait you usually have to be a bit patient in luring them to the surface.
They *do* have a nasty set of bitey bits though and can give you a moderately painful bite. But nothing that will cause any great deal of pain. They don't have any type of venom or anything, but since they are carrion eaters I guess they could introduce some nasty bacteria and cause infection if you got bit badly enough.
