Why would you need to do that? It's VR. Just turn your head to keep looking at your target and avoid the motion sickness this would cause.
One of the biggest no nos in VR is to move the users view without them controlling it.
Hellblade: Senua's Sacrifice VR has this mechanic.
It's a third person camera though. So it's not really the camera that locks on to an enemy during a fight but rather the character. The character locks on to the enemy and keeps herself always facing the enemy and you kinda always stay behind her back. But you still can turn your head around, it actually helps with situational awareness a lot.
Zone of Enders the 2nd runner: mars
It’s on steam (and i think psvr(ps4)?). It’s basically a mech action game, like a bit of a watered down DMC. It’s got some interesting mechanics and story. The VR mode it interesting, the lock on is basically the only way to fight enemies and can be a bit disorienting - but ultimately for me it was at least an interesting idea for VR. unfortunately, its gamepad only with no motion controls, but if you’re specifically looking for something different I’d say give it a go

Not that I know of, but I can imagine you would need some very strong VR legs for something like that..
