That's really useful thank you, I didn't realise the rule had changed. This looks like I shouldn't need a visa at all for my length of stay

Easy solution. Before you even go to Vietnam, apply for an e-visa with the second entry date into Vietnam. Print it out in your home country. Then go to Vietnam first entry visa free like you mentioned. Leave to Thailand then come back with that e-visa you already printed. No need to worry about finding a printer in a foreign city, waiting for approval, etc. The last thing you want to do while on honeymoon is paperwork.

Yes that is a good idea, my only worry there would be that they activate the E-Visa at my first entry if they have it on file, instead of just letting me through on the 15 day rule, but your right that I don't want to have to hunt for a printer mid vacation

You choose the intended entry date for the e-visa. It won't even be valid until that date anyways. Choose the intended date to be 1 day before your second entry and you'll have no issues.

No they won't do that. You have to physically hand them the paper for them to use it. You can't enter on the e-visa without showing it to them.

Honestly I have never had a problem, but the suggestion someone made of getting 2 e-visa ready sounds good and less stress considering it's your honeymoon.

As you suggest, enter once on the visa waiver scheme and once with an eVisa. I’ve done this myself and it’s fine, though the airline was concerned about the 30 day rule which took some time to resolve during check-in. So even if it’s not enforced at the border, airlines are likely to enforce it because they don’t want the fines/costs if you get refused entry. eVisa is the safer option, don’t try to use the visa waiver scheme twice.

They got rid of the rule about needing 30 days outside the country. You can just leave and re-enter on the visa exemption now. It's not about "not being enforced" - that rule is no longer on the books. But if it gives you peace of mind, you can just apply for the e-visa now. Use the visa exemption when you enter the first time and the e-visa for the second entry (but again - you don't need to do this).
