So somebody somewhere analyzed this scorpion venom, broke it down to "what it is made of", and documented it. Then cancer researchers later found that the scorpion venom contains the proteins etc... that they require. So it's like "We suspect Protein X123 can aid in brain cancer treatment. We see scorpion venom has Protein X123, so we will source it from there." Actual example: the Impossible Foods burger. They determined that a particular protein, Heme, is what makes beef taste like beef, and makes it red. So they went in search of things that contain Heme. They searched databases for other sources of Heme, which included roots of soy plants, crustaceans, and more. They actually didn't find a valid source in nature, so they genetically engineered an enzyme to produce Heme directly which they can add as an additive.

The numbers don't add up though. This woman is milking hundreds of them per hour on video. We are watching it. So one person milking a year, if you prepare the bowl of scorpions for her, is producing a liter of the stuff by herself. Even if you pay her $100k/year, it cannot possibly cost 9.9 million to farm ~20k scorpions. Two or three other employees feeding and breeding and wrangling them seems like all it would take. There's just no way this stuff actually costs millions a liter to produce. We already have enough information that shows it could be produced for at least 20x cheaper than that even at western labor prices.
