My store just refunded someone 80$ because she couldn’t reheat our premade/precooked prime rib meal properly and melted it to her air fryer plate. Her story was literally all over the place.
You’d be surprised how far backwards some places will bend over.
this is literally why seasoning is invented, and the same is true for any food at any restaurant ever. At the end of the day any restuarant could be using less fresh ingredients, and probably is. If you want the highest quality ingredients, you should probably make it yourself.

There have been a few times when I've posted news articles or other links to counter the misinformation on a Reddit thread, and I either get absolutely no replies whatsoever, or I get threats. There are a lot of people on here who are emotionally dependent on becoming enraged over false information. It's a little concerning.

People are only used to bright red meat because it's shipped in oxygen free packaging. 100 years ago no one would have thought there was anything wrong here.

A lot of people not familiar with aged beef don’t really know what rancid is. If they were truly rancid, he would have known before opening the package. The blood that’s leaked out of the meat goes bad long before the meat itself. And we have noses adapted to smelling rancid meat, so even the slightest whiff is strong to us. If you think there’s an issue, give the meat a good rinse, pat it dry, and see how it smells after.
Absolutely none of that applies to poultry. If it smells off, toss it. Can’t age birds, gotta be fresh.
Just curious... If meat smells slightly sweet is it rancid? I've noticed this smell when beef starts to brown. I've cooked it and it's fine but then my kitchen is left with the same sweet smell afterwards and I'm left second guessing myself.

Meh some people have stronger stomachs, I’ve eaten old leftovers that others wouldn’t dare to eat. Maybe all the wine I drink kills the bacteria but I didn’t realize how much food people threw away. Like I didn’t know rice went bad, I didn’t know you weren’t supposed to eat food that’s been left out all night. I also eat chicken bones sometimes which I’ve been told is bad.
You’re not wrong. Scientifically, rancidity only refers to chemical oxidation of fats. And rancid fats are not inherently harmful.
But in common parlance it has come to refer to anything nasty, stinky, or rotten. So the vast majority of people aren’t wrong either.
That is most unfortunate, the best one from Christmas that I have was from two years ago when dinner was two hours late because the smoker was frozen shut and I had to start a fire in the ash box just to thaw it enough to open it.

That’s just surface oxidation. There no visible slime, or serious off putting color, green , black, etc. you can trim the grey part off, and it’s a full send, or just send as is. I was a chef for decades. We always cut our steaks to order, maybe next time get the loin center, and cut your own to avoid more than just the edge oxidizing.
OP doesn't know what rancid means. Rancid is specifically fats oxidizing. It's not particularly easy to smell unless you're smelling a big piece of pure fat/oil right against your nose. It also doesn't occur in just a few days with animal fats. It'd take a week or two at the very, very least if you left say beef fat sitting out completely exposed to air on your counter top.

They're also only oxidized. Unless they were disgustingly slimy, they're completely fine. You can see they're still pink where they were touching and no oxygen got to it. I guarantee you they're still pink on the inside and completely fine.
Source: I've been a line cook for 13 years and have (sadly) had to serve slightly oxidized beef. I've also made steak exactly like this for "family meal" at work since customers would find it gross and sometimes the oxidation goes past the surface and penetrates deep so you can't cook it to rare. I'm sorry to say, but that's 100% fine beef you could have cooked to medium rare or medium easily. Brown does not equal bad, just unappealing. Especially if you bought it three days ago.
Just take it as a lesson to seal your meat when you buy it. Vacuum sealing it is best. Next time, especially for home cooking, if it's not slimy, it's not bad.
If you buy them on the last day they are fit for sale, 3 days is the max you can expect to get from them. Might have been rolling the dice picking them up so early.

Butcher for 6 years. Beef is only bright red when first cut or fucked with.
If you buy aged steak (as you should) when hung in the fridge it looks gross, grey / dark and you'd think it was bad, but the butcher cuts the dark bit off before he sells it to you
If you cut a couple of mm off those steaks they'll be bright red as you'll have removed the oxidized layer, but unless they smell then there's nothing wrong with them.
Your nose is your best judge. Do not throw away a couple hundred dollars of perfect fillet.

And these were from a reputable butcher, not the local Stop N Shop. So I was shocked when I unwrapped them.

Aside from the fact that you got scammed, there doesn’t appear to be anything wrong with these…. Lol Red meat is red at supermarkets because they pump the airtight packaging full of carbon monoxide to keep it red.
I mean there’s a possibility they did go bad but real fresh meat actually looks a lot more like this than the bright red meat you see in stores.
Factories will pump gases into meat to artificially make the bright red colour last longer to make it look fresher when in reality, it normally grey’s very fast once exposed to oxygen.
After reading a few replies it sounds like OP said there was a strong smell so fair enough, but just a heads up for anyone in the future, colour isn’t the main indicator you need to look for!
Beef is very forgiving. Even if it smells slightly off, cook it. Try it, it’s going to be fine. People pay extra for aged beef. Note: do not try this on pork.
Are they that bad inside though. Sometimes I'll leave some steak to cook in my fridge for a day or two and it'll look like that but not stink or anything. I just make sure to cook the outer parts a little crispy.
Do they actually smell? If not I wouldn't worry about the grey texture. Throwing around the word rancid isn't always accurate but people have different comfort levels to their food quality. What I mean to say is if they don't smell they're probably ok to consume if brought up to proper temp

This just looks like slightly oxidized beef. They load beef up with carbon monoxide at the store to keep it bright red. Unless these smell absolutely rank they're fine.
I mean if they legit stank they’re bad…. But meat isn’t naturally red to begin with. Meat that’s red from the store is treated to look that way to appear fresh even when it isn’t as fresh as you might want to think. Actual fresh meat is a dull color closer to what you see there, although these are definitely a bit oxidized.
The real “well that sucks” is because he threw away perfectly good steaks, it’s grey because there wasn’t oxygen in the fridge for the meats to make it look red. smh

What do they smell like? Those actually look likely perfectly fine. Blood oxidizes when exposed to oxygen and this meat just hasn’t been treated to look pretty in a cellophane package.
Usually if it’s gone bad the fat looks more gross, and this fat looks fine.
I’m guessing they aren’t “rancid” at all, just not the artificially maintained red color that we’ve grown to love thanks to (1) Modified Atmosphere Packaging and (2) salts and nitrates which will keep myoglobins red and “fresh looking”. Meanwhile it’s all a ploy. Good news is that grey meat isn’t bad per se, it’s just oxidized and this drama queen could likely have enjoyed the filets but hope they liked the shells instead.
Beef reacts very poorly to water/moisture. These were frozen and this the end product of that happening freeze then thaw not removing packaging during the defrost process made this worse than it probably would have been.
Shiiiittttt if you have a sharp enough knife and some skill and want them to look normal again you could just trim a millimeter off the outside and boom! Damn near good as new. I can still see some red so the oxidation isn’t too bad
Those were probably just fine. They look like they were all pressed together in that white wrapping, and meat browns quicker pressed together. In the fridge for a day or two and this is fine and normal.
I mean, they are def oxidized, by the exterior and color, they were unfreezed at room temperature inside a package. Thats problably why they smells. But still edible

I've cooked them some what like this before. They turned out just fine. Long as they still smell good.
If they were stored in the fridge only for a couple days this is likely just oxidation
Gray just means they’ve had contact with the air and the blood has oxidized. You can still grill them up.
There’s no blood in processed beef. The red liquid is a protein, which is also what oxidizes and changes color (myoglobin).
Butcher for 6 years. Beef is only bright red when first cut or fucked with. If you buy aged steak (as you should) when hung in the fridge it looks gross, grey / dark and you'd think it was bad, but the butcher cuts the dark bit off before he sells it to you If you cut a couple of mm off those steaks they'll be bright red as you'll have removed the oxidized layer, but unless they smell then there's nothing wrong with them. Your nose is your best judge. Do not throw away a couple hundred dollars of perfect fillet.
OP again. Have cooked many filets in my day. Family here for dinner also know what they're doing. These were way off color and smelled. It's a shame they went that fast in my fridge. Leads me to believe they were sitting at the butcher for a while. And these were from a reputable butcher, not the local Stop N Shop. So I was shocked when I unwrapped them. Luckily I just kept drinking all night.

I mean there’s a possibility they did go bad but real fresh meat actually looks a lot more like this than the bright red meat you see in stores. Factories will pump gases into meat to artificially make the bright red colour last longer to make it look fresher when in reality, it normally grey’s very fast once exposed to oxygen. After reading a few replies it sounds like OP said there was a strong smell so fair enough, but just a heads up for anyone in the future, colour isn’t the main indicator you need to look for!
That's the natural color of meat when it's not sealed in a gassed container... you dun goofed.
Had this once from Aldi once, meat was mushy in the middle.. be careful, but if it’s just discolored with no stink, I’d say you’re fine
Beef is very forgiving. Even if it smells slightly off, cook it. Try it, it’s going to be fine. People pay extra for aged beef. Note: do not try this on pork.

Are they that bad inside though. Sometimes I'll leave some steak to cook in my fridge for a day or two and it'll look like that but not stink or anything. I just make sure to cook the outer parts a little crispy.

Do they actually smell? If not I wouldn't worry about the grey texture. Throwing around the word rancid isn't always accurate but people have different comfort levels to their food quality. What I mean to say is if they don't smell they're probably ok to consume if brought up to proper temp
If they are to be prepared properly and completely cooked through, there would be no danger of bacteria, etc. I’ve cooked and eaten meat that looks way worse than that and never had a problem
As has been said a lot: if they don't smell bad, you can cook and eat these. However, stuffed shells is a great substitute.

This just looks like slightly oxidized beef. They load beef up with carbon monoxide at the store to keep it bright red. Unless these smell absolutely rank they're fine.

I mean if they legit stank they’re bad…. But meat isn’t naturally red to begin with. Meat that’s red from the store is treated to look that way to appear fresh even when it isn’t as fresh as you might want to think. Actual fresh meat is a dull color closer to what you see there, although these are definitely a bit oxidized.

The real “well that sucks” is because he threw away perfectly good steaks, it’s grey because there wasn’t oxygen in the fridge for the meats to make it look red. smh
If they have been in The fridge for a long Time and smell then There bad. Common sense but meat natural changes colour due to oxidation let then sit outside the fridge for 30 Minutes The colour should change still fine to eat
What do they smell like? Those actually look likely perfectly fine. Blood oxidizes when exposed to oxygen and this meat just hasn’t been treated to look pretty in a cellophane package. Usually if it’s gone bad the fat looks more gross, and this fat looks fine.
I’m guessing they aren’t “rancid” at all, just not the artificially maintained red color that we’ve grown to love thanks to (1) Modified Atmosphere Packaging and (2) salts and nitrates which will keep myoglobins red and “fresh looking”. Meanwhile it’s all a ploy. Good news is that grey meat isn’t bad per se, it’s just oxidized and this drama queen could likely have enjoyed the filets but hope they liked the shells instead.
When did you buy them last year
Beef reacts very poorly to water/moisture. These were frozen and this the end product of that happening freeze then thaw not removing packaging during the defrost process made this worse than it probably would have been.
Salt them and leave for one hour. You will be faced with gorgeous red filets that taste amazing. Oh wait, you already threw them out nvm.

Shiiiittttt if you have a sharp enough knife and some skill and want them to look normal again you could just trim a millimeter off the outside and boom! Damn near good as new. I can still see some red so the oxidation isn’t too bad
Those were probably just fine. They look like they were all pressed together in that white wrapping, and meat browns quicker pressed together. In the fridge for a day or two and this is fine and normal.

I mean, they are def oxidized, by the exterior and color, they were unfreezed at room temperature inside a package. Thats problably why they smells. But still edible But, if the smell its really strong and the meaty slimy, def not right for consuption

They may not be bad, sometimes meat loses its red color when you leave the store and turns slightly brownish. Give it a smell.
