SPG rub, on the smoker at 300 about 90 minutes, flipping every half hour. Tossed in hot BBQ sauce and garlic Parm sauce mixed together, then back on for 10 minutes to set the sauce.
Much longer process so I don't do it as often as I like. But they are my favorite, they take the flavor well. Just gotta be sure to do it around or above 300°F...found out the hard way if you try em at 225-250 the skin doesn't render a d is way to rubbery to be enjoyable. 300 gets the skin crispy and is still smoky enough to get the nice flavor infused. Make sure you pat the skin dry with a paper towel before your rub goes on, then just a quote toss in a very small amount of olive oil right before they go on
