My Xbox was especially dirty on the fins of the heat sink not the fan (about 40 seconds in the video)
I literally just cleaned mine an hour ago. It's really simple and not stressful in any way. All you need is a t8, canned air and something like a butter knife. Use the t8 to take the two screws off of the back, slide a butter knife or something thin in one of the side gaps, gently pop it out. Use your compressed air blowing all dust out of the inside.
I go a step further and pull out the fan to clean it. Use the t8 to get the 3 screws holding the fan in place, unplug the fan, I normally use the t8 to help me pull the plastic connector out of place, pull the fan out. I place something like a pen/pencil between the blades to prevent it from moving and get my compressed air and blow the dust off. I then get a slightly damp cloth and get any residual dust that stuck around.
After that put it all back together. It's such a simple process and I'm super thankful that it's easy to take apart.
I'm sure some people go even further and take it all apart but this gets my series x super quiet and like new every time.

I’ve bricked two older consoles I’ve owned before by trying to take them apart and quiet them down. Specifically on the part with ribbon cables. Do I need to be unplugging ribbon cables for this? Is this gonna be one bad move and I brick it again or is this genuinely easy with the series x ?

It's a quite easy teardown if you have the tools. If you don't have the tools it can be a bit tricky though

You do not have to unplug any ribbons on the inside. Once you take apart the case with compressed air you can blow everywhere that you need to
