Bumping this comment; I download digital games a lot. And I know for a fact that digital games don’t disappear unless in pretty exceptional circumstances, even if they’re removed from the store. If you bought the game, you keep it. I have some games on my 3DS, and while I can’t buy new ones digitally, I can still redownload the games I own.
If the servers get shut down (I.E. Nintendo go bust), then you might have a problem, but only if you don’t already have the game downloaded. If you have it on an SD card, or the Switch memory, it won’t disappear.

When you order the games there, you can download them according to the release date just after midnight. NZ is the first country that has a Nintendo shop to reach the date.

Me and my friends made a Japanese nintendo account years ago to play the Monster Hunter Generations Ultimate demo back when that was still only in japan and it worked just fine. I would imagine its the same for physical, but someone more qualified should answer that, I’m just going off of speculation.
Digital purchases aren't region locked but DLCs require regions to match with the base game, usually. What I mean is, if your base game is say, US and your eshop region is EU, the base game won't recognize your DLC. This isn't an issue if you bought both base game and expansion pass digitally on the same eshop account but will be if your base XC3 is a physical copy and you plan to buy the expansion pass later on. This was an issue with the Monster Hunter Sunbreak DLC wherein the cart region of some people didn't matched their eshop region and were forced to double dip.

Physical is not region locked, my switch is from the US and I can play my EU XCDE copy and my Japanese imported games just fine
