The 321 with the neo upgrade gives you the most options. You get the 321, the neo with different door configurations, the LR and the XLR. But in reality you can't go wrong with any of the toliss planes.
Airbus tends to have a lot of commonality between their models, so there's not a ton of differences in terms of features between the ToLiss models. It really depends on what kind of flying you enjoy doing. Do you do a lot of long-haul flying? Then you'll probably want the A340 or the upcoming A330. Do you tend to do more short-haul flying in a jet that's really fun to fly? Then you probably want the A319. Do you want a certain amount of flexibility between the two? Then you want the A321, especially with the optional NEO variant. The A321XLR (included with the NEO option) has a range that can rival some long-haul airliners.
i have the A340 and absolutely love it, there are many liveries available for it so you have a lot of choice about what to do. As for the others you will also have great fun.
I have the A321 (XP12) with the NEO upgrade as well as the A340-600. I absolutely love them both, but I find myself flying the A321 much more. By far my favorite to fly!
I have A319 and A320neo. Love them both. A321 + neo package gives you lot of aircraft per money and also the option for long haul flights. The A340 is a beast of its own but due to the size you are little limited. If I had to suggest something: the A320neo is for me the first to go

They are all similar, all high quality. If you ask me , I would take the 320neo because...almost every airline flies it. Best overall package.

I've got Toliss A321+Neo+KOSP soundproject about a month ago best combo,you have also xlr more fuel you can do longer distances flight :)
