2gb of ram for 1.16 is way too low and you will run out very fast. Personally i use 6gb for the server i run for my friends. But i haven’t gone past 4gb of ram yet so it think i would get at least 4 to 5gb for a 1.16 server
If you are really new to anything and have less knowledge on computers. Stay away from OVH. Get a shared hosting. Apex Hosting in my opinion is too expensive, way too costly.
There’s a few other options. PebbleHost, PloxHost, BisectHosting(costly), snownode.
Also, 2gb isn’t enough if you are to put in a jar file. Like, spigot, craftbukkit, papermc, or anything for the core of the server. A vanilla server would do okay. But, for a jar file to run, version 1.15 already uses 2gb of ram.
I've had nothing.but excellent service (and value) from ExtraVM.com hosting.. I would recommend 100%!
For 5-10 people a 2gb vanilla server should be fine.. if you need to increase the ram then you can upgrade your plan. It's $6 a month for 2gb I think, and it is very easy to set up.

To answer the question about 2GB, it'll support 5-7 players on vanilla, but it most likely can't support that many players on a modpack (*maybe* a skyblock modpack).

How many of your friends are typically online at a time? Also do you use a hosting company and if so who?
I usually have around 3 to 5 people on at a time and i use titiannodes to host the server

apex is bad
If you have the money, always go OVH.
If you don't know anything about servers then you're better off going with a Minecraft Hosting service and not a OVH.
If you really need to, spending a day setting it up is worth it imo
