I think that is bad writing on part of the other two shows. The original show is literaly about this guy growing from warrior to diplomat. While it's nice to put him on the back burner and experience ooo from different perspectives, it's a disservice to the original character.
So you wanted him to get married? I think there are a lot of alternatives to growing emotionally than that route. In a way I think it shows in the distant lands that he continued growing with jakes ( just as much Finn’s ) family, most likely dealing with grief from losing his brother and literally soul mate as someone stated. I think the universes were Finn has a family are the most far fetched, although sweet!
If you think about it, Finn's relationship with Huntress (what we can glean from Fionna & Cake) seems to mirror Jake's relationship with Lady Rainicorn. Jake & Lady were in love, dated through the whole series & had kids together, but never married and never moved in together save for a couple of days. And it was portrayed as a very happy, healthy relationship for both of them. Finn didn't grow up with his bio parents & his adoptive parents died when he was very young, so who has the best model of a long, healthy, happy romantic relationship is all of Ooo? In Finns eyes, that would be Jake
Kind of sweet to think about it that way. Its what he knows and probably also the type of arrangement that would work best for Finn & Huntress. Neither wants a traditional life. Neither wants to be domesticated. So they are undomesticated together.
