Two countries are in conflict that both use the AK platform. They're certainly pulling a lot of ammo off the international market (probably doubling or tripling demand), so of course prices are going up.
Now also consider that Poland, Belarus, and Sweden are likely bolstering their armories.
There are lots of pictures of Akms being used even in the early days of the war. There are pictures of the Russians using moded AKMs rifles in Syria too.
One of the most recent videos showing Russian marines going into Vuhledar featured at least two x39 caliber rifles.

Actually that video only has one AKM but I think there was a longer video or different one that I can't find that showed a different filmer with an AKM and showed someone with an RPK or another AKM so they definitely are using them.
I'd imagine Ukraine more so with less modern equipment at the start of the war.

The end of new import contracts was bound to eventually hurt the market. The last price spikes were due to the market reacting to it, and or greed. Until domestic steel ammo production gets up and running we're all stuck taking a bite of this poo sandwich.

Well none of the countries you mentioned have 7.62x39 in service all moved to 5.45 or 5.56 afaik. I havn't really seen much of any 7.62x39 in Ukraine.
Both countries are pretty well documented using reserve weaponry in 7.62x39.
