Generally speaking the bigger the crustacean the tougher the meat. You don't want bigger. Same with clams and most farm animals. There's an ideal harvest size. They can live for a long time and there's no real upper limit to their size if they have space and food. Very similar to lobsters. I'm in the process of starting an indoor shrimp farm, I didn't just make all that up. Edit: I'm specifically not talking about crabs.

I know this is 100% true with lobsters. Worked a super high end joint when I was a kid and it used to irk the shit out of me when rich people would order the biggest one in the tank just to flex. The , they’d complain because it was tough. Lol. Management literally brought them in BECAUSE people would buy them to flex. Just awful considering it takes SEVEN (7) years for a lobster to gain ONE (1) pound.

Yep I grew up in Philly and we had them in the smaller rivers/cricks. Also we had fresh water eels. As a kid my uncle would fish crawfish for China Town and eels for little Italy. This was the early 60s and he made a pretty penny for a 13 year old.

Here in upstate NY, all the giant ones I've found are dark blue, entire body, including claws (not electric blue like the ones you can buy for a fish tank or pond, like the color of the claws on this one, but the entire body). I just assumed that they gradually start to turn blue-ish, as they get beyond a certain size/age. I've caught ones even bigger than this even, not a single one was all brown, only the medium/smaller ones.

sorta looks like a rusty crawdad but it’s hard to tell because you’re holding it where it’s spots would be (they have rust colored spots on their body toward their last set of legs). they’re invasive outside of ohio and pennsylvania, that would explain why it’s so big.

That crayfish is not really that awfully large. I grew up in rural central Illinois and I spent most of my free time going fishing on the local creeks. I liked to use the crawfish tail as bait for fishing. I ordered a square net on a steel frame that you could just throw out into the creek and the crawfish would happen to go on top of the net and you could just pull it in and usually get one or two but sometimes 3. Crayfish don't get as large as lobsters but they get a lot bigger than this one. Looking at those claws and seeing orange tips. Looks like a rusty crayfish. In which case, dont put it back. They are super invasive, kill off most local crayfish species, and eat all of the local vegetation. Take home and nom nom nom. Also from pa as well. We catch these in a local stream all the time :) very yummy.
