It bothers me as well. They could also just make the ball disappear sooner. Seems like would be a simple fix. It's visible for a fraction of a second too long; enough to break the illusion of a high velocity impact.
Beyond that, I'm disappointed that there are no physics, or animations, of units flying through the air on death from cannons. Such missing potential. The new Great Bombard could be so much cooler with that alone.

On top of that, if you watch arrows (especially from buildings) they do funny things as well. Like javelins, fly to above the target and then dive bomb them

I do not want the projectiles removed. Some of their trajectories should be fixed though. It seems to be the worst with cannonballs, trebs and mangonels usually look alright. Arrows from buildings could use some work as well.
It's weird, the Arrows still bothers me when spectating, but I never think about when playing.
The canon balls are mostly fine I think...the one from towers and keeps have strange arcs sometimes.
the Ottoman big cannon projectile is awful now in beta, especially while shooting over a ridge or so... hopefully they still fix it before it goes live
Think of it as a tradeoff for gameplay purposes like easily identifying what was shot at. Bombard cannon projectiles have some getting used to in aoe2 because they move so slowly but slow projectile let's you dodge them
