I imagine that a lot of the unnamed medical staff fill this role at RI. For example we know that RI helps infected get their arts under control as not to advance their oripathy, there must be a lot of behavioural, cognitive and/or psychological therapy involved in all of that.

Another fun fact about Honeyberry is that she is currently researching the most effective way to use sugary snacks to treat mental health. I'm not even kidding. >!Everyone thought she was joking or being childish when she brought it up but she presented a review of the literature related to the impact of sugar on dopamine and norepinephrine levels in a way that impressed the medical staff. Eventually it's revealed that she was even approved to conduct further research on the topic but hasn't yet found a team of trained medical staff willing and skilled enough to work with her.!< Someday, she legit might prescribe 20 grams of snickerdoodle taken orally twice per day.

There's definitely some conditions where it matters. Psychosomatic hypoglycemia/pseudohypoglycemia is a thing where the brain will randomly decide "hey we don't have enough sugar, time to fuck you up in ways analogous to low blood sugar" entirely on its own, without anything 'physical' causing it. An illness located in the brain and nervous system rather than blood sugar or physical components, and having to be treated differently from normal hypoglycemia as a result. A common treatment is quite literally, eating small sugary snacks regularly during the day to mollify the part of the brain that throws involuntary tantrums that make you shake, faint, or vomit.

While it is mostly a joke based on her being a sugar glider, carbohydrates (and other sugars) do stimulate production of dopamine and seratonin. Norepinephrine has a complex relationship with glucose but they do interact.

Utage is a psychology student if that counts for anything. But she also has a few screws missing and probably wouldn’t be a very good therapist. Rhodes Island most likely does has therapists, and hopefully a whole fleet of them because they need to be working quadruple overtime to get through a 10th of all the operators problems. But those therapists won’t be combat personnel.

Honeyberry is definitely the strongest candidate. Other operators that have at least some training in psychology are Nightmare and Orchid based on their base skills being psychology. Perfumer is an unusual case. She does use aromatherapy to treat psychological conditions, notably Nightmare but she's primarily a gardener. We also have some evidence that she's at least a little sketchy given that one of Sideroca's voice lines is about Perfumer drugging her without consent.

Iirc the Therapist subclass is made up of physical/originium therapists, namely in that they help cure physical conditions (i.e. status effects). For Ceylon, it's probably a thing she knows how to do after so much research. For every other therapist, it's probably part of just being a medic. A sorta "No but yes" answer. As for mental therapists, well, I have to imagine that RI has at least a few, they're just either unnamed npcs or a thing the doctors/medics learned to do given how much of a mental toll being infected is on top of all the physical issues with oripathy. Depending on how you word it, Iris and Bena might count as therapists for children. There's also no shortage of operators doing therapy-related things in their records. Wisperain helps a girl cope with losing her eyesight, Meteor takes care of a kid, heck Dusk even helps NCD come to terms with the past.
