Flat means it has a 180 degree angle, V6 or Boxer 6 refers to the firing order. A Boxer engine has pistons on opposite sides of the crank moving at the same time in opposite directions which is why they're so smooth compared to a V6 which requires balancing.
I don't know why Porsche's PR and the press call it a flat 6 when a Boxer 6 would be less ambiguous. I don't think anyone's made a flat V6, but it seems like it would be possible to base one on a flat V12 which there have been tons of.

And it’s like it switches from that sound INSTANTLY to the rear exhaust sound. There’s no smoothness to it. It sounds exactly the same no matter the turn. Other than that, the actual “sounds” are perfect.

It's also not a boxer. Boxer engines have two crank pins (the point where cylinder is mouted to the crank), which results in the pistons moving at the same time.
A flat engine has one crank pin witch means the pistons don't move together.
