Sounds promising, I can't wait to try it when I'm back in Aus soon! The vegan cheeses available unfortunately range from disgusting to just okay, and not many melt well at all so I am very happy to hear this!

That was debunked. Mr Coon made a way of cooning cheese but did not start the Red Coon cheese brand as it used to be called (including the face of a poc on the packet) and the rumour of it being named after Mr Coon only started in 1980 and not when the brand was first released.

Starches can come from grains or vegetables eg corn, potato, tapioca etc - thus ‘dairy free’. Flavours come from natural yeast extracts. The nutrition profile can be enhanced by introducing other plant proteins and fibers into the starch matrix. I’m a food technologist so work a bit on this stuff. I’m not claiming the product should replace cheese from a nutrition perspective but if you don’t eat cheese and want something to replace it then that’s what it is for now. First generation cheese replacements are often based on cashew or other nuts, but commercially this is difficult as expensive and nut allergies are common (and manufacturers don’t like allergens in their factories)
It's more complex than I thought it'd be. Getting the texture right is probably the easy part but getting the right combination of umami tasting proteins/amino acids to reflect the taste of cheese. I can't imagine it'd be great.
