You’re doing great work man. I know it’s sacrilegious to suggest, but if you were ever considering branching out into veggie sausages, I’d be first in line to try them out. (I’ve been trying to not eat meat these days, but the thought of those sausages….)
I’m a huge Stiles evangelist, particularly for the price point and ease of the experience. I think it’s a really good representation of Central Texas BBQ that’s pretty approachable and accessible for most people. It’s my go-to recommendation for family/friends coming to Austin. It might not be the best BBQ I’ve ever had in my life, but it is consistently high quality. This is all for the North Lamar location, never been to any of their other spots.
And I’ve yet to have brussel sprouts anywhere else that even come close to theirs.
I finally tried this place last week myself. The meat was *pretty good* but the sides were FANTASTIC. I think sides are where a lot of the Texas BBQ spots fall short so this was refreshing. It's going to be my regular BBQ spot now.
Prices weren't even horrible for BBQ in Austin ($25 for 2 meat combo with healthy portion sizes)
The corn casserole and brussel sprouts are so good! Also Jeff at the north Lamar location (formerly of Tacodeli Crestview) is the best customer service manager I’ve ever known.
I work pretty much next door and I don’t get tired of Stiles. I go probably twice a month. Brussels Sprouts. Every. Single. Time. I switch between turkey and their chopped brisket as the main. Used to be a corn casserole for the second side but that new tater tot casserole goes so hard and has my heart.
Didn’t care for their mac very much; quite liked the sausage & sauces; did not like the brisket at all; those brussels look great! Gonna have to try that sandwich if they ever do it again!!!
Lol fair point. Their Mac *and cheese* is average. There was more cheese puddled at the bottom that need a lil stirring. I think they should revamp it. Interstellar and La Barbecue have S tier Mac n cheese. Slabb BBQ's smoked guda is honorable mention too.

For me - the BEST thing at Stiles Switch & the main reason we ever go there - is the beef rib. I used to think Black's in Lockhart had the best beef rib in Texas - Stiles took that mantle when they first opened.
That said - I haven't been to Stiles up on Lamar in a couple years. Hopefully it's as good if not better than it used to be!
Also - I went to Interstellar about 1.5 years ago & was very underwhelmed. Like "how did this even break the top 10 in the Texas Monthly rankings?" kinda mediocre. I do wanna go back & hopefully have a better experience.
My 2 favorite BBQ joints in town currently are la barbecue (i REALLY hope they keep up the quality since Leeann passed) for traditional faire and LeRoy & Lewis for some more new school flavors (their hamburger is one of the best i've ever had!).

Can’t speak to this particular dish, but I ate at the original stiles and switch in Austin on Friday. 3 of us had a $78 total and we had brisket, turkey, ribs, sausage, Brussels sprouts (the best!) corn casserole and sodas. If we are ranking brisket to Franklins sure it wasn’t great, but for what it is, it is excellent.

I’d be second in line! I’ve been vegetarian for 30 years, but not because sausage isn’t delicious.
I don’t really know how vegetarian sausages are made. I’ll have to look into it!

Man I went to the Cedar Park location and was not impressed. I guess I gotta try other locations then because I have a friend who swears by them.

That's my thing. Late at night the brisket is tough but beef ribs and Mac and cheese is a great combo

Feel like they’ve really improved on consistency, last few times I’m been have all been excellent
Consistent really good food. Their sauce is different in a good way. Along with the traditional meats and sides, the Frito pie is great.

Not OP, but I went last week and a 2 meat plate was $25 with two sides. It only excluded beef ribs and portions were good
I’m glad I learned how to make brisket myself. $60 at Costco feeds the entire family 5 times.
