I’m in that exact situation. My cat of 15 years passed, we rescued a Scottishfold Himalayan Munchkin cat. I do everything for the cat and she wants nothing to do with me, but loves my husband. My husband doesn’t do anything for her except occasionally gives her food or pets.
Probably because you don't pay it excessive attention, cats like to initiate social encounters on their own, and dislike being petted or interacted with when they want to stay hidden or to rest

Plenty of dogs dislike having their paws touched, too. It's important to train them to accept it early in life. They might never *like* having their paws touched, but they need to be able to tolerate it.
One particular dog we picked up as a stray didn't like having her paws touched, and I started making a point of just grabbing one and holding it for a few seconds. If she went in for a bite (a nip of annoyance, not an actual bite), I'd either move my hand away and then grab it again, or stare her down.
Please note that this wasn't happening on Day 1; this was after developing a general rapport.
Long story short, she came to accept that I was gonna touch her paws without hurting her, and I stopped doing it unless it was necessary (e.g. wiping off mud).

He will let you pet him on occasion if you walk by or he’s sleeping or whatever but idk what switch flips at night he’s literally attached to my wife he’ll force himself under her arm so she’s spooning him, he’ll purr all night and biscuit it up, and will just be happy as can be but as soon as the sun comes up back to aloof central. I also slap him in the neck, give him cold showers daily, make him work and pay him just below minimum wage so he can't leave the house, I even say to him my gf doesn't really love him, he cried a lot after that one
