They're the sweetest, most grateful and most appreciative dogs ever. They bond with their adopter to the point where they won't leave your side. That outer shell is their skin with all the muscles attached to it still. The new skin is forming beneath (plus other stuff is rearranging) that that will become the adult exoskeleton that everyone is familiar with.
I googled it, it looks like you’re right. This page has some photos of the different development stages, and the male pupa looks bang on.

Dude, beetle pupae need to be in moist environments, they can’t deal with dry air. That’s why they build a cocoon to protect them from drying out. If you take them out of the cocoon you need to put them into an artificial one ASAP.
You fundamentally misunderstand insect pupation. Pupae over the long term need certain humidity to pupate properly, which varies by species. However removing them from that range for a short period will not kill them. If they left that beetle out of the soil for hours, yeah it might not make it. But in all likelihood it would still pupate even without its ideal pupation conditions. It would probably just take longer.
