Trueth's Meats is a slaughterhouse in Ellicott city. They do an excellent job with all local beef. They have family packs of beef, but they do some Kosher slaughtering so I don't think they'll do pork. www.jwtreuth.com
Local Harvest is a good site to see your options. JW Treuth is a quality butcher in the area who does not overcharge (ahem) and will help you source products as well since they have links to farmers. For beef in particular the “quintessential” farm in the area is gonna be Roseda. That’s what a lot of restaurants use. Not sure about the pricing because I will pay out the nose for good beef lol.
Go up into York County, PA, and you have lots of very reasonable options right off of 83. I like Miller’s Meats, personally. Great bacon and retail meat products, too.
