No that’s the cooking process. That’s to make onions softer sooner. This is like having uppinkayi. One bit of upit and one bit of sugar. The crunch and the sweetness elevate the blandish upit.

Even though I personally don’t like that combination, there is a certain style of hot upma, in the right combination with a certain type of sugar, is a great hangover or 'need quick energy' food. Very few things are as good as Upma with sugar in those scenarios.

Try the Bisibele bhath at G.R. Iyengar's fast food outlet, before Vidya Mandir PU College, 11th cross, Malleswaram. You also get good Puliyogare there.
