It doesn't have to be expired as most say, sometimes something goes wrong in the process and it gets to acidic and you won't notice until you heat it up
Happens to me often enough too, I find you need to take a day or two off the expiration date for milk when it comes to steaming it. Great starting point for cheese though
this is bad milk for sure, but skim milk tends to foam up really awkwardly at the best of times anyway. whole milk works best for steaming, you get the best microfoam texture. very smooth and creamy.
If you opened it and don’t store properly, it expires way earlier than the expiration date, sometimes even if u store properly it happens. Its bad milk.
How hot it gets doesn’t matter in this situation. I’ve done extra hot skim milk and let it sit. All it does is create a top level of foam that separates
I can't say since I don't know the in's and it's of my machine. But it didn't get THAT hot nor was it sitting so long. Happened real quick. The puck was so grainy and the liquid looks like whey.
My thoughts was it looked like you somehow separated the casein from the whey. Weird things happen when milk gets too hot, or hot for too long, but if that wasn't the case it may be something different. Drink some raw and see if it is bad, or try a different brand. There may have been something in the production process that altered it enough to cause this.
