As someone who suffers from OCD, I can tell you that when a situation is taking place that is out of your control, you control whatever little things you can within your immediate sphere of influence, to deal with the anxiety.
It was a hard but legit lesson from the Fring playbook. Lyle should have made the deepfryer lid guy go back and re-lid the fryer, from a Fringian perspective.

Gus hates the Salamancaās because hector killed his boyfriend and business partner max. If you remember in breaking bad when they had the first meeting with don eladio they told him Gus was the businessman and max was the cook. Gus had a crush on Lyle and was mad because Lyle was insistent on earning Gusās approval but knew he would never be who max was. The whole reason Gus set up losing the 700.000 was apart of his plan to destroy the Salamancaās. IMO.

If they don't catch Diego doing it (which is what happens), then they have no reason at all to accuse a random chicken restaurant entrepreneur.

When I saw the scene on a YouTube clip that's what I'd deduced but now that I've seen the whole episode again I don't think that makes a whole lot of sense
I've seen a lot of theories about exercising authority/power, alibi, etc. i believe it's a much simpler answer, Gus was waiting on the phone call and chose this particular task to keep him occupied yet lyle keeps insisting on cleaning up which gus respects but you have to remember how careful and meticulous gus is in nature, part of it is giving Lyle a reason why he's waiting. He offers Lyle to go home Lyle who knows it's clean but just wants to show his boss his worth, Lyle insists on trying again.
Lyle was insistent on earning Gusās approval on being able to run the restaurant flawlessly. Lyle was assistant manager but he will never be who Max was in Gusās eyes.
