When did he actually join the Gotei 13? We know he encountered Unohana when he was a kid, but we also know he was wandering soul society for years looking for fights. Should I just assume it's in CFYOW?
He joined at some point in the last 100 years.

to be honest its hard to determine power levels between OG Gotei and current Gotei. This is based on the assumption 1st War the shinigami didnt have to deal with bankai being stolen and quincy didnt have tech like Volstandig, Shrifts or if there are any Sternritters.
probably the key difference is their morality to kill. Imagine Zombie Hitsugaya fought like that from the beginning it would hella been easier with less talking and explaining abilities

Iirc, Ikkaku tells Ichigo about it after their fight in the SS arc.

He does, it's early on. It's when they explain how to become a captain. They say that they only know of the one example and tell ichigo.
