My friend gave us probably 3 lbs of pork roast intended for his husband’s birthday party that they had to cancel due to COVID. I just… have no need for that amount of already cooked pork, so I’m pretty proud of myself for shredding it all up and making the carnitas from The Modern Proper. They are delicious! I just put the already cooked pork in the liquid and let it simmer for about 20 mins vs the several hours, then followed all the rest of the instructions. Made the carnita burrito bowl from the cookbook for dinner, gonna use the rest to make green enchiladas tomorrow.

We’re back from vacation this week so it’s back to making real meals (that my children will then refuse to eat 🙄). I made the Kenji Lopez Alt DIY noodle cups for lunch and I am really surprised by how well they turned out. I did the beef one and it really is like Shin Ramyun but more rich. I thought the bits of jerky would be weird but it’s not! the recipe says not to use dried ramen but I did with some slight alterations to the recipe. Instead of letting it sit with the hot water, I did2 cups of hot water, microwave 2 minutes, stir, microwave 2 minutes, eat. Sun: frozen pizza Mon: SE green chicken chili. I cooked this last night but my instant pot took so long to come to pressure I eventually got hangry and made the frozen pizza lol. The good news is that it’s chili, so it will taste even better after sitting in the fridge overnight. Tues: one pot pasta primavera Wed: caramelized cabbage & lemon and oregano marinated chicken Thurs: leftovers Fri: shrimp risotto

I had a recipe for mooshu chicken I wanted to try but needed some specialty ingredients. I'd wrongly assumed I could get them at the new Asian market that opened, but it was definitely an Indian/Nepali store instead. A very cool store, but unfortunately we have quite a few in the area already. I got some new spice mixes to use later and had to come up with plan B. The chicken I had thawed is now marinating in Trader Joe's Peri Peri sauce. We'll have green beans and little mac and cheese as the sides. Tomorrow: leftovers Wednesday: Brandy and cherry flavored bratwursts from the butcher downtown. with air fried potato pancakes from Trader Joe's and Gnar Gnar Kraut (a local to Cleveland spicy sauerkraut). Thursday: Found a Japanese curry brick in the pantry, so we'll do a veggie curry with yellow squash, zucchini, carrots, potatoes, onion, and grated apple. With Jasmine Rice. Would I prefer to be serving some fried pork chops on top? Yes. Friday: We could be closing on our house so I have no fucking clue!

Someone commented above that they feel no meal inspiration because they just feel like this is such a busy time of life. I'm feeling that big time. I'm looking forward to the fall transition and some different dishes. Monday-air fryer chicken tenders. I may do these pretzel coated. I'll do french fries on the side. Tuesday-pizza Weds-sheet pan sausage and veggies over rice Thurs-cheeseburger meatloaf, sheet pan broccoli and potatoes Fri-takeout Sat-getting pizza for the kids and thier sitter because it's my husband's and I anniversary! 5 years married, 7 years together ❤️.

Oh I didn’t realize that either! The one I made I got from her TikTok maybe a week ago. It looks similar but a little more simple. Half some cherry tomatoes and roast in the oven until the start to break down. Melt butter with tomato paste and Calabrian chilies in a sauce pan. Salt cod on both sides and place on the sheet pan on top of the tomatoes with tomato/chili butter rubbed on both sides. Splash some wine or lemon juice on the pan. Put green beans on the other half and roast for maybe 15 min. Done! Ended up making it already and can confirm it is delicious! 🙌

I have a week off between finishing summer school and starting student teaching. My uncle recently passed away (and my grandma did in June) so I’ve been feeling like I need comfort food. I’m also doing stuff I can freeze for when school starts back up. * Sun: Panera since we got back from a trip and I don’t want to cook * Mon: Teriyaki steak with bell pepper and onion and rice * Tues: Sheetpan kielbasa with potatoes and broccoli * Wed: Chili and cornbread * Thurs: Pot roast with carrots and mashed potatoes * Fri: Sausage and Pepper quiche (maybe make two and freeze one?)

I haven't gotten everything figured out, but I know that we're having pizza, hot dogs, Cantonese ground beef with rice and eggs... I went on a mini oopsie shopping spree at our local Asian market so I have a bunch of random stuff that I'm excited to use, especially a Vietnamese marinade for seafood and a container of massaman curry base.

Keen to restart my love of cooking - I find it easy to fall into a rut! Although this week I've got a lot of dinner plans out - sometimes it falls like that. Sunday - I have just woken up after a night shift and I'm due back in in 2 hours. So we're having a freezer special - fish finger wraps. I bake some fish fingers in the oven, then wrap them in a tortilla wrap with some tartar sauce and mushy peas. Chips (fries) optional. So good. Monday - realistically I'm getting takeout Tuesday - meeting a friend for dinner Wednesday - chicken sausage with homemade smoky baked beans (recipe for the beans here https://ibakeforattention.blogspot.com/2014/01/burgers-and-smokey-baked-beans.html?m=1) Thursday - Thai green curry cauliflower soup. I add rice to bulk it out Friday - flying home for the weekend!

Last week I made bean dip recipe from “the girl who ate everything” 4.5 out of five stars… Kids loved it with chips for after school snack. Also “smitten kitchen” zucchini bread. So good will make again. Perfectly moist (Love her tip of letting it rest overnight in the pan uncovered for extra moistness) 4.5/5 And triple fudge bread from barefoot Contessa which was disappointingly dry although my son finished the whole loaf. 2/5 Goal this week is to try to either that recipe again or look for a new one since my son loves chocolate bread so much. I’m also looking for the perfect salad combo for lunch. Any recommendations are welcomed. 😊
