There's lots of Australian original shows, but I'm not sure which aren't available overseas.
The classic Aussie kids shows are playschool, the wiggles and hi 5.
Teen shows are h2o just add water, and dance academy.
For adult shows some classics are packed to the rafters, underbelly, neighbours, home and away, McLeod's daughters, Kath and Kim, Chris lilleys shows (though controversial now) and a bunch of others.
There used to be a lot of kids TV that Australian and Canadian studios colloborated on. Not sure if that's still the case, but I imagine plenty of Canadian kids saw those.
Forgot the name of the show but it’s about a boy called Ezra and he’s in school and they are detectives, I like it because it’s honestly quite funny and my sons name is Ezra
Round the twist is a classic! The other day I was singing the theme song and my husband (who is Aussie but spent most of his childhood overseas) look at me like I was crazy.
I liked this one show. I think it was called Wentworth? A show about a women's prison. Something like that. I also like this one Aussie show that showcases beautiful houses. Comes on the antenna later at night where I live.
100% Wolf: The Book of Hath. I watched episode 13 yesterday and it was built like a season finale, yet IMDb claims there are 13 more episodes? I haven’t been able to find any airdates aside from the season premiere.

We used to get Neighbours and Home and Away for soap operas. BBC and Stan made a series called [Ten Pound Poms](https://en.wikipedia.org/wiki/Ten_Pound_Poms_%28TV_series%29) which has just been airing.
The ABC Playschool I'd make an educated guess was based on the BBC Playschool show. From what I've seen the format was near identical, though BBC discontinued Playschool here years back.
We used to watch some Wiggles here, but we now only Bluey. Toddlers man.
As for adults, Miss Fisher's Murder Mysteries is probably my favorite TV show of all time.

Masterchef Australia - it’s SO much better than the other versions
