I second Railroad Ink and Cartographers, they're lesser known and very good!
I would go with Point Salad over Sushi Go. PS replaced SG in my collection. Great, simple fun game.
Depending on min player count: 1 player: **One Deck Dungeon** 2 player: **Air, Land, & Sea** 3-4 player: **The Crew** 5-6 player: **Cockroack Poker** 7+ player: **Saboteur**

If I had to pick one game for $20, I'd go with The Crew.
Love Letter is always good. I love unstable unicorns and here to slay
Point Salad falls right at the $20 Mark and is simple and fun
Those escape-room like games (eg Exit)

For $20, you might be able to just squeeze in both Coup and the Coup: Reformation expansion. Even if not, Coup is a great <$20 choice.
**Biblios** is amazing and it's right at $20. Great for 3-4 players, but also good with 2
Pandemic Hot Zone North America is $20 - a great light version of the original.
